Tomato Relish


Ingredients
1 kg (2.2 lbs) of tomatoes (blanched first to remove skins).
3 chopped large onions
2 cups sugar
1 cup malt or cider vinegar
1 Tbsp salt
1 Tbsp mustard powder
1 Tbsp curry powder
1 Tbsp cornflour
1/4 c extra vinegar.

Method
Chop tomatoes a into large pot. Add onion, sugar, vinegar and salt. Bring to the boil & simmer for 20 minutes.

Measure other ingredients & stir to a smooth paste with the extra vinegar. Stir into tomatoes and boil for another 5 minutes. Ladle into sterilized bottles and seal.
