Crunchy Granola Biscuits


These are easy to make and work out very economically as you get a LOT of biscuits!  I normally get three baking trays or about 50 biscuits from this mix.  They taste great and travel well so they are ideal to take anywhere as a quick snack which is also fairly healthy as they contain rolled oats, dried fruit, seeds and nuts.

Ingredients
200 grams (or 7 ounces) of butter
1/4 cup of peanut  butter
1/4 tsp of salt 
1/2 cup of sugar
1 cup of brown sugar
2 eggs
1 tsp of vanilla essence
1 and 1/2 cups of flour
2 cups of rolled oats
1 tsp of baking soda
1 cup of sultanas (or raisins)
1 cup of chocolate chips
1/2 cup of chopped almonds (or walnuts)
1/2 cup of sunflower seeds (or pumpkin seeds)

Method
Melt the butter in a saucepan or the microwave and tip into a large bowl.  Add the peanut butter, both sugars, the eggs and vanilla essence to the melted butter and mix.

Stir in the flour and baking soda, and lastly add the sultanas, chocolate chips, nuts and seeds.

Place spoonfuls on a greased tray, flatten slightly and bake in a medium oven (180C or 350F) for 12 - 15 minutes.

Nice N Nutty Biscuits


How To:

Melt 200 gms (7 oz) of butter

Add to the butter in a large bowl and beat together:

1 cup of brown sugar (or white sugar)
¼  cup of raw honey (or golden syrup)
½ tsp of salt
2 large eggs
¼ cup of peanut butter
1 heaped teaspoon of cinnamon
1 teaspoon of turmeric (optional)
2  teaspoons of vanilla

Add to the wet ingredients:
2 cups of rolled oats
1 and a half cups of wholemeal flour
1 cup of chopped nuts (walnuts, almonds, brazils etc)
½ cup of seeds (sunflower, pumpkin, chia, sesame etc)
½ cup of dark chocolate chips
1 cup of dried fruit (raisins, sultanas, apricots, dates etc)

Combine all the ingredients.

Roll the mixture into tablespoon size balls, place on greased baking trays and flatten with a fork.  Bake at 200C (390F) for 15 minutes.

Oaty Nut & Seed Biscuits


Don't let the words "health" and "seed" put you off - these biscuits are yummy!  They're jam packed with good things like oats, seeds and dark chocolate but very easy to make and ideal to take in the lunchbox.    It was fun to use our own homemade sultanas in these too from dehydrating some of our grapes earlier in the year.

Ingredients:
200 grams (7 oz) of butter
1/2 cup of peanut butter
1/4 teaspoon of salt
1/2 cup of white sugar
1 cup of brown sugar
2 eggs
1 tsp of vanilla essence
2 cups of rolled oats
1 and a half cups of wholemeal flour
1 tsp baking soda
1 cup of dark chocolate chips
1 cup dried fruit (I used apricots and sultanas)
1/2 cup of ground almonds
1/2 cup of seeds (I used half sunflower and half pumpkin)
1/4 cup of chia seeds
1/2 cup of chopped nuts (walnut, almond, brazil etc or a combination thereof)

Method:
1. Melt the butter in the microwave or on the stove.
2. Put the butter in a large bowl and add the peanut butter, combine the two.
3. Add the salt, sugars, eggs and vanilla essence and mix.
4. Add the flour and baking soda and combine.
5. Lastly mix in the oats, seeds, dried fruit, ground almonds and chocolate chips and mix together.
6. Roll into balls and place on a greased baking tray. Press balls lightly with a fork to flatten.
7. Bake at 180C (350F) for about 15 minutes.
