Shortbread


Shortbread is an old favourite which is loved by many.

Ingredients
250 gms (9 oz) of butter
1 cup of icing sugar
1 cup of cornflour
2 cups of plain flour

Method
Cream the butter and icing sugar together until light and fluffy.    

Sift and combine the cornflour and flour and mix into the butter mixture.  

Knead well and then roll out on a floured board to about 1 cm  thickness.

Cut into the shapes you desire and prick with a fork. 
 
Place on a lightly greased oven tray and bake for around 25-30 minutes at 150C (300F) or until light golden brown.
