A madeira
cake is always one of my favourites, so simple and easy to make yet perfect to
have as a treat with a cup of tea or coffee.
Ingredients:
175 gms (5 oz)
of butter
3/4 cup of
sugar
3 eggs
1 and 1/2 cups
of flour
1 tsp of baking
powder
1 - 2 tsp of
grated lemon rind (depending on how lemony you like it).
Method:
Cream butter
and sugar until light and fluffy.
Beat
eggs until thick and stir in lemon rind.
Combine
dry ingredients.
Add
egg and lemon mixture to the butter and sugar, slowly stirring and alternating
with the dry ingredients. Do not over beat.
Spoon mixture
into a lightly greased 20 cm ( 7 or 8 inch) round or ring cake tin and bake for
30 minutes at 180C (350F) or until cake springs back when touched.
