Whitebait Fritters

Whitebait fritters are a special Kiwi delicacy - made with West Coast whitebait of course!

I use this traditional West Coast recipe.

Ingredients
1 cup of whitebait
1 egg
1 tsp cornflour
salt and pepper to taste.
2 Tbsp of butter (to fry fritters in)

Method
Beat the egg and cornflour together, then add the whitebait, salt and pepper and combine.

Heat butter in a pan, spoon the mixture in to form patties and fry for a short time either side till it is golden brown (do not overcook). 

I generally make 6 fritters from 1 cup of whitebait.

To serve squeeze fresh lemon juice over the fritters (this enhances them greatly).

Eat with fresh bread spread with butter or margarine.
