Whitebait
fritters are a special Kiwi delicacy - made with West Coast whitebait of
course!
I
use this traditional West Coast recipe.
Ingredients
1
cup of whitebait
1
egg
1
tsp cornflour
salt
and pepper to taste.

Tbsp of butter (to fry fritters in)
Method
Beat
the egg and cornflour together, then add the whitebait, salt and pepper and
combine.
Heat
butter in a pan, spoon the mixture in to form patties and fry for a short time
either side till it is golden brown (do not overcook).
I
generally make 6 fritters from 1 cup of whitebait.
To
serve squeeze fresh lemon juice over the fritters (this enhances them greatly).
Eat
with fresh bread spread with butter or margarine.
