Fried Rice

If you have leftover, cold, cooked rice you can use it in fried rice to make a tasty meal.

Alternatively if you're cooking rice for some reason it's easy to make some extra and the next day you can use the extra rice in a fried rice dish.  This is a good way to use up other leftovers or bits and pieces too.  The other great thing is the "recipe" is so flexible you can be as creative as you like.

This is what I typically do with some leftover rice.

Heat the wok, add some chopped bacon and stir fry till cooked, set aside. You can use chicken, beef, prawns, ham or whatever else you have on hand if you do not have bacon.

Chop some onions, stir fry till soft, set aside.

Mix 2, 3, 4 eggs (whatever you require) with a little milk and make an omelette in the wok. Remove from heat and slice up with a knife.

Tip in the cold, cooked rice and start stir frying it. Once it's getting warmed up I add soy sauce, Worcestershire sauce and seasonings.

Now is a good time to add any vegetables, leftover or otherwise - sweetcorn, courgettes, celery, broccoli, frozen peas, finely diced carrots etc.

Once the rice is hot and the vegetables are nearly ready return the meat, onions and egg strips to the pan.

Now's a good time to add some sauce if you wish.   Some of the options we enjoy are satay, spicey plum, sweet chilli or teriyaki.

Stir everything together gently and once it is all piping hot, serve, eat and enjoy!
