Andrew enjoys iced tea and usually buys the
commercially bottled versions which seem to average about $5 for 2 litres or
around 4 pints. I'd made it a time or two before so I knew it was very
cheap to make. Yesterday Andrew and I did a little bit more experimenting.
Unlike many other countries not many people I know in NZ have ever made or drunk iced tea so it isn't something I have much experience in. I did a quick surf of the Internet and decided most of it looked like too much work for a very hot day. If you're already overheated and tired on a scorcher of a day the last thing you feel like doing is standing over a hot stove! We decided to use our own quick and simple method and this is what we came up with.
Raspberry Iced Tea or Punch
8 teabags
4 tbsps of sugar
2 cups of raspberries (we used frozen ones which had been grown in our garden)
Combine ingredients in a large, heatproof jug and pour over around 4 cups of boiling water. Steep for 7 minutes. Remove teabags. Strain the rest to remove any pulpy bits. Add enough cold water to make it up to about 2 litres - or 4 pints - and leave it in the fridge to cool. When cold pour into glasses with ice.
If you wish mix it with equal parts cold lemonade. Very yummy!

Juice of 4 lemons
2 Tbsps of honey
Piece of finely chopped, fresh root ginger. (About the size of a woman's thumb).
Combine in a large, heatproof jug and pour over 4 cups of boiling water. Steep for 7 minutes. Remove teabags. Strain the rest to remove any pulpy bits. Add enough cold water to make it up to about 2 litres - or 4 pints - and leave it in the fridge to cool. When cold pour into glasses with ice.
If you wish mix it with equal parts of cold gingerale. Andrew particularly liked it when mixed with the gingerale. Lovely drink either way!

Peach Iced Tea
8 teabags
4 Tbsps of sugar
Combine in a heatproof jug and pour in about 4 cups of boiling water. Steep for 7 minutes.
Meanwhile add 1 can (or around 2 cups) of golden peaches and their syrup to the blender and blitz, then strain to remove any pulpy bits.
Once the 7 minutes has passed remove the teabags and add the peach mixture to the tea and sugar combination. Add cold water to about 2 litres or 4 pints. Cool in the fridge and pour into glasses with ice.
This was very pleasant and mixed well with equal parts of cold lemonade.
We made 6 litres of iced tea for pretty much next to nothing, in part because we had free raspberries, lemons and peaches. The cost then was just the teabags, some sugar or honey and a little piece of root ginger. It probably would have only cost around $2 to make 6 litres of the iced teas so that makes it a very inexpensive and refreshing drink if you make it at home and it's so easy!
I am sure we will be experimenting with some more flavours very soon.
