These are easy to make and work out very economically as you get a LOT
of biscuits! I normally get three baking trays or about 50 biscuits from
this mix. They taste great and travel well so they are ideal to take
anywhere as a quick snack which is also fairly healthy as they contain rolled
oats, dried fruit, seeds and nuts.
Ingredients
200 grams (or 7 ounces) of butter
1/4 cup of peanut butter
1/4 tsp of salt
1/2 cup of sugar
1 cup of brown sugar
2 eggs
1 tsp of vanilla essence
1 and 1/2 cups of flour
2 cups of rolled oats
1 tsp of baking soda
1 cup of sultanas (or raisins)
1 cup of chocolate chips
1/2 cup of chopped almonds (or walnuts)
1/2 cup of sunflower seeds (or pumpkin seeds)

Method
Melt the butter in a saucepan or the microwave and tip into a large bowl. Add the peanut butter, both sugars, the eggs and vanilla essence to the melted butter and mix.
Stir in the flour and baking soda, and lastly add the sultanas, chocolate chips, nuts and seeds.
Place spoonfuls on a greased tray, flatten slightly and bake in a medium oven (180C or 350F) for 12 - 15 minutes.
